Who doesn’t love banana bread and my mother’s is by far the best. So naturally, a cookie version seemed like a no brainer. Until I tried, and tried, and tried again. I found out so many ways how to not make a banana bread cookie until it finally turned out. It’s definitely one of the cookies I’m most proud of. It has just the right amount of banana flavor with pops of semi-sweet chocolate chips and a moist center which is fantastic with it’s caramelized bottom.
