After spending 2 years in Mexico, Doc got a taste for Mexican sweets and this cookie is a nod to so many of those Mexican flavors which includes: dulce de leche mixed with shredded coconut and Mexican vanilla. The top is covered in toasted almonds and dark chocolate with a bit of heat. Sophisticated flavors but not so much, as even Doc’s kids love this cookie. And it just happens to be Gluten Free.
